Homemade Nutty Coleslaw Salad

Whether you have a potluck or a dinner with the family, this crunchy delight is a no-brainer. It takes 5 minutes to throw this salad together and it serves well as a yummy side dish or even a meal with the simple addition of grilled chicken. If there are any leftovers, they won’t be around for long!

We prefer the chicken flavor but beef or vegetables are a close second. Try them out and see which flavor you like the most!

To retain maximum noodle crunch, serve within 12 hours of mixing the dressing into the salad.

Ingredients for Nutty Coleslaw Salad

  • 1 bag coleslaw mix
  • ⅓ cup almond slivers
  • ⅓ cup roasted sunflower seeds (unsalted)
  • 1 package of chicken/vegetable/beef ramen noodles
  • ⅓ cup apple cider
  • ½ cup oil (vegetable or olive)
  • ½ cup sugar
  • 1 flavor packet from ramen noodles

Break the noodles up in the package prior to opening it (save yourself the mess!). Chop up your green onions* (after rinsing them), measure your almonds and sunflower seeds, then toss everything into your mixing bowl with the coleslaw mix.

*Note: if you bought a big bundle of green onions and won’t use them right away, chop them up and freeze them in a ziploc bag for recipes down the road!.

Whisk the apple cider vinegar, oil, sugar, and ramen seasoning packet together. Store separately if not eating the salad the day you’re making it to retain your noodle crunch.
